    Char on the outside is nice, the grey line indicates the cuisson is less than “perfect” but it’s a good lookin steak if you like yours medium/medium well.

    For you. Too much gray band and past medium. Hotter shorter sear. Rest. Put in a 400⁰ oven to 125⁰ and let it cruise to 130⁰.
